Ingredient Substitutions
If You Don't Have This: Use This:
1 tsp baking powder ¼ tsp baking soda & ½ tsp cream of tartar
1 cup buttermilk 1 cup low fat milk & 1 Tbsp vinegar or lemon juice
2 Tbsp liqueur ½ tsp extract (i.e. orange extract for orange liqueur)
1 cup self raising flour 1 cup all purpose flour, 1½ tsp baking powder &
½ tsp salt
1 cup sour cream 1 cup plain low-fat yogurt
1 cup cream 1 cup low-fat evaporated milk
Usual Ingredients: Healthier Substitutions:
Cream to thicken soups Pureed potatoes or veggies
½ cup oil, butter or margarine ¼ cup applesauce or prune puree & ¼ cup canola oil
1 egg 2 egg whites
1 cup chocolate chips ½ cup mini chocolate chips (dark) & ½ cup dried fruits and/or nuts
1 cup sugar 1 cup Splenda® granular
1 oz chocolate 3 Tbsp cocoa powder
1 cup white flour ½ cup whole wheat flour & ½ cup white flour
